Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.

Why go, and how to do it well
Roots is the Bangkok roaster that made Thai-grown coffee its whole identity. It has used only Thai-grown beans since 2018, roasts for cafés across the city and sells beans and brewing gear, and the Sathorn bar on the ground floor of Bhiraj Tower is its showcase. It is a clean, wood-and-concrete room with a Modbar espresso setup, and the menu runs from straight espresso and filter to the fruity cold brews and coffee shakes the brand is known for.
This is the place to taste what Thailand's own coffee does, from a straight espresso to a cold brew built on northern Thai beans. Bags of beans to take home are sold at the counter.
It is open every day from 07:00 to 17:00. It sits right beside BTS Surasak on South Sathorn Road, which makes it an easy breakfast stop for anyone staying along Sathorn or Silom.

Tips for Visiting Restaurants & Food
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
Use Grab for Delivery
The Grab app works for food delivery across Thailand, letting you order from street stalls and restaurants alike. It's invaluable on rainy days or when you want to eat in your hotel.
