Nai Ek has anchored Yaowarat since 1960 with a single great idea executed relentlessly, kuay jab — rolled rice noodles in a pork broth so peppery it warms your ears — crowned with burnished, crackling-skinned pork belly. The bowl is Chinatown's signature dish and this is its signature address, Michelin-listed and permanently busy, with offal for the traditionalists and that shattering crispy pork for everyone else. Little else on the short menu distracts from the main event.
The shop sits right on Yaowarat Road amid the neon and the evening street-food carnival, which makes it the ideal anchor for a Chinatown food crawl, with kuay jab here, then grilled skewers, chestnuts and dessert soups from the carts outside. It runs from morning until late, unusual for a legend of its type.
