Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.

Why go, and how to do it well
Ning's is the cart at the mouth of Sukhumvit Soi 38, the one older guides call the Soi 38 mango sticky rice stall, a few minutes from BTS Thong Lo across the road from Mae Varee. The soi's night market has mostly been redeveloped, but the mango cart stayed. It sells mango sticky rice in four sizes, from a small box to an extra large that is closer to a meal, along with plain sweet sticky rice by the portion or the half kilo and durian sticky rice when durian is in season.
The comparison everyone makes is with Mae Varee a block away. Ning's is cheaper, with boxes from about ฿80 to ฿150 depending on size, and the mangoes are big; the trade-off is that the fruit can run a little more tart than the premium shop's. If you are in Thong Lo in the evening and want a box to take back to the hotel, it is the easy stop.

Tips for Visiting Restaurants & Food
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
Use Grab for Delivery
The Grab app works for food delivery across Thailand, letting you order from street stalls and restaurants alike. It's invaluable on rainy days or when you want to eat in your hotel.
