Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.

Why go, and how to do it well
Mother Roaster is the Talat Noi café people tell each other about. It started in 2019 as a two-stool coffee stand run by a woman everyone calls Auntie Pim, went viral, and moved the same year into the upper floor of an old building in Talat Noi, reached through a working car-parts yard and up a narrow staircase past the engines. Upstairs, the beans are roasted in house and brewed by drip, with a long menu running from dark to light roasts.
The iced latte served over a single large ball of ice is the drink people photograph, and beans are sold to take home. There are now four branches, but this is the original experience, and the walk in is half the charm.
The entrance is easy to miss behind the yard, so look for the sign at street level. It opens at 09:30 and closes in the late afternoon. It is a short walk from MRT Hua Lamphong, and the street art, So Heng Tai mansion and riverside lanes of Talat Noi are all around it.

Tips for Visiting Restaurants & Food
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
Use Grab for Delivery
The Grab app works for food delivery across Thailand, letting you order from street stalls and restaurants alike. It's invaluable on rainy days or when you want to eat in your hotel.
