Why go, and how to do it well
Laab Ton Yang is a northern Thai restaurant in a large open shed on the ring road at San Phi Suea, about 15 minutes north of the city, and it's in the MICHELIN Guide's northern Thai selection. It's run by women, and the dishes to order are the pork larb, the beef soup and the fermented pork.
The menu is entirely in Thai and little English is spoken, so a translation app helps. It's open every day from 10:00 to 21:00, at around ฿200 to ฿400 a person on Google's listing, and with close to 1,400 reviews it's a local favorite rather than a tourist stop.

Tips for Visiting Restaurants & Food
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
Use Grab for Delivery
The Grab app works for food delivery across Thailand, letting you order from street stalls and restaurants alike. It's invaluable on rainy days or when you want to eat in your hotel.
