That alone makes it worth the trip out to Nang Lae, on the edge of Chiang Rai city.
This is a home, not a teaching kitchen with twenty stations and a microphone. Groups are small, the pace is unhurried, and nobody's going to rush you through a chopping demonstration. If you've never cooked Thai food before, that suits you. If you have, you'll get further into the ingredients than a beginner class allows. Anyone who wants a slick, polished operation with a gift shop attached should look elsewhere.
