Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.

Why go, and how to do it well
Noodle Soup House Ban Jabo is the best-known stop in Ban Jabo, a small, quiet village high in the mountains of Pang Mapha district, about an hour's drive from Pai and 40 to 50 km out of town. The village's few cafés and its noodle house are built along the edge of the ridge, and the seats on the edge look straight out over the valley, which is what people make the drive for. The menu is simple, noodle soup or coffee, and the view is the same from the coffee shops next door.
It's a short detour off the Mae Hong Son loop, and the way I'd do it is Tham Lod Cave in the morning and Ban Jabo for lunch, then back to Pai. Google lists the noodle house open 07:00 to 16:00 daily, so it's a breakfast or lunch stop, not a sunset one. Grab a seat on the edge if one is free, and ride the mountain road in daylight.

Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
Use Grab for Delivery
The Grab app works for food delivery across Thailand, letting you order from street stalls and restaurants alike. It's invaluable on rainy days or when you want to eat in your hotel.
