Why go, and how to do it well

Evening is the whole point here. The stalls open at 10:00, but the market only really fills out once the heat drops and the food vendors get going, so if you turn up mid-afternoon you'll be wandering past half-covered tables wondering what the fuss is about. From around 17:00 it's a different place, with grilled seafood, fresh fruit, Thai staples cooked to order, and the usual sprawl of clothing, souvenirs and handicrafts filling the rest of the space.

My advice is to treat it as dinner first and shopping second. Eat your way along the food stalls, then browse. The handmade and locally produced bits are worth a look, though plenty of what's on sale is standard tourist stock, and you'll see the same elephant-print pants in every second stall. It's an easy, unhurried night out for anyone staying in the Khao Lak resort strip, and it works fine with kids.
