Imlamai Khaosoi ข้าวซอยอิ่มละไม (Night Bazaar)(Used to be a Hotpot place)
Tucked inside Stall 23 of the Chiang Rai Night Bazaar, Imlamai Khaosoi is a compact, no-frills food stall that has earned a devoted following for its khao soi — the rich, coconut-curry noodle soup that is the signature dish of Northern Thailand. The fried chicken khao soi is a particular standout, with visitors consistently praising the depth of flavour in the broth and the quality of the chicken. Portions are generous and prices remain remarkably low, making it one of the more accessible ways to eat well in Chiang Rai. The atmosphere is casual and communal, very much in keeping with the lively night market setting that surrounds it. The owner is notably attentive and hands-on, regularly checking on diners, refreshing soup bases, and ensuring guests are well looked after — a level of care that elevates what could otherwise be a simple street food stop. Note that some reviews also reference a steamboat or hotpot-style set, suggesting the menu may offer more than just noodles. Good to know: Imlamai Khaosoi opens in the late afternoon, from around 16:30 most evenings (17:00 on Sundays), and closes at 22:00. As a popular stall in a busy night market, arriving earlier in the evening is advisable to secure a spot and avoid the busiest crowds. There is no website or advance booking available, so walk-in is the only option.

Visitor Reviews
Best spot for dinner in Chiang Rai. Owner is super passionate about the bbq/hot soup concept, he was a pleasure and provided best service. He kept checking on us, renewed the soup, and the food was top quality. We very much enjoyed the dinner and recommend you to do not miss it!
At THB200 for a set for two pax, no one can fault a delicious steamboat. And all presented so impressively. The operatornis also very helpful, constantly coming over to check if everything is ok. Everyone who visits Chiang Rai must eat here at least once.
Wow. Incredibly flavorful Khao Soi. One of the best dishes I've ever had. This is a very unassuming food stall at the Chiang Rai Night Bazaar. I ordered the fried chicken Khao Soi and the garlic bread, which paired very well together.

Tips for Visiting Restaurants & Food
Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
