Big Noodle Chiang Rai Night Bazaar
Tucked into the night bazaar area of central Chiang Rai, this distinctive dining spot operates more like a noodle customisation station than a conventional restaurant. Diners select from a range of Asian instant noodles spanning Thai, Chinese, and Korean varieties, then choose their own toppings, add-ons, and sauces before having the bowl cooked to order. The interactive format has made it a popular haunt for local students and curious travellers alike, and the casual, informal setup fits naturally into the night bazaar atmosphere surrounding it. The experience is straightforward and social, with an emphasis on personalisation over a fixed menu. Visitors describe it as a fun and approachable meal, particularly suited to lunch or an early dinner. Pricing draws mixed reactions — some find it affordable, while others consider it on the pricier side for the format — so it is worth factoring that in before visiting. Good to know: Communicating dietary requirements can be challenging due to a language barrier, so visitors with specific needs such as avoiding spice or meat should come prepared with a written note or translation app. The venue opens daily at noon and stays open until 2am, offering flexibility for night bazaar visitors at any hour, though earlier sittings may provide a calmer experience with more time to browse the noodle selection without the late-night rush.

Visitor Reviews
I really liked the concept. It's like a noodle shopping mall. You pick your noodles, add-ons, and toppings, and they cook them for you. A bit pricey, but you get to customize it however you want.
Very good you should come once you visited
Really enjoyed the place and it is also a cute and fun thing to do for lunch/dinner. You will find different kinds of Asian instant noodles from Thailand, China, Korea etc. It is set up like a small supermarket with the option of preparing your own noodle soup there. There is a counter where you can buy some extra toppings. The preparation is simple and well explained. You can enjoy your noodle soup downstairs, but there is also another cosy area upstairs where you can take a seat. A cool place for a quick and cheap meal 🍜

Tips for Visiting Restaurants & Food
Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
