Saigon Crust - Bánh Mì Vietnamese Baguette in Pai
Tucked into the laid-back town of Pai in Mae Hong Son province, Saigon Crust brings Vietnamese street food to the mountains of northern Thailand, specialising in bánh mì — the classic Vietnamese baguette loaded with savoury fillings. The menu caters to a range of preferences, including a tofu option for vegetarians, and portions are notably generous. Visitors consistently highlight the quality of the bread itself, describing it as genuinely crusty rather than soft or disappointing, which sets it apart from many imitations. Fillings are fresh, proteins are well-prepared, and the ordering process is straightforward with quick turnaround. The staff have drawn particular praise for their warm and attentive service, adding to the relaxed, welcoming atmosphere that suits Pai's easygoing character well. On the practical side, Saigon Crust is open every day of the week from 11:00am to 7:00pm, making it a convenient stop for a late lunch or early dinner during a day exploring town. There is no website listed, so walk-ins appear to be the norm. As a small, focused eatery, arriving during off-peak hours — mid-afternoon rather than the lunch rush — may mean shorter waits. It is worth noting that some reviewers found the bread can occasionally be a little crumbly, so handle with care.

Visitor Reviews
Newly opened when I was there a few weeks ago! Got a free water with my "all inclusive" Banh Mi. Taste was very nice, the banh mi huge, chicken was tender and all the other fillings very fresh. A pity I couldn't go back for another one as opening hours were a bit random around this time and the shop was always closed. Would come back anytime to have another one! Loved it even I think the bread could have been a little bit crispier 😊
Very nice Vietnamese Banh Mi. The Bread really is crusty, the toppings and protein very tasty and the ladies are super lovely.
Ate there 2 days ago and wish I could come back! The Bahn Mi is so tasty and well made, and the service is top notch.

Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
