Salt & Oak
Tucked into the Bo Put area of Koh Samui, Salt & Oak has earned a strong following for its fresh seafood, prepared simply and well. The approach is straightforward: whole fish, lobster, crab, and king prawns are selected, weighed, and cooked to order — often over a BBQ with little more than salt and pepper, letting the quality of the ingredients speak for itself. Dishes like Tom Yum Hot Pot and garlic pepper prawns appear regularly in visitor feedback as standouts, and the kitchen accommodates vegetarian diners with care. The atmosphere is relaxed rather than formal, with attentive table service — staff are frequently mentioned by name in reviews, which points to a personal, unhurried dining experience. Prices are described as reasonable given the quality, particularly for fresh whole fish priced by weight. The Bo Put location sits away from Koh Samui's busier tourist zones, giving it a quieter, more neighbourhood feel. Good to know: Salt & Oak opens at 1 PM daily and closes at 11 PM, so it covers lunch through late dinner seven days a week. It does not serve breakfast. Given its consistent popularity, arriving earlier in the afternoon or on a weekday evening may mean a calmer experience. As no website is listed, reservations may need to be made by phone or in person — worth planning ahead during peak season.

Visitor Reviews
This place is definitely one of the best restaurants we visited. The staff were friendly and very helpful. The ambience was nice too. We had a few vegetarians in our group and they were very accommodating. The gravies were all superb and they provided us with vegetarian pineapple fried rice and spring rolls as well. The Thai red curry chicken was one of the best I have tasted. The prawns with garlic and pepper were really good as well. The seafood was also really fresh.
We had the King Prawns, and they were cooked to perfection with just the right amount of garlic and pepper. The Tom Yum Hot Pot was also incredibly flavorful and delicious. The restaurant is super centrally located in the heart of the village. Just a heads up that there isn't a lot of privacy, as the cars and bikes drive by literally a meter away and there are many people walking past.
Wow - what an amazing experience ! Fresh Gold Snapper - weighed and priced with you ( good value ) picked and prepared - then BBQ' perfectly. Salt and pepper only - then side sauces seperate. Fresh and very tasty in a street side table to take in the vibe of Fisherman's Koh Samui Highly recommend 👌

Tips for Visiting Restaurants & Food
Learn the Spice Scale
Say 'mai pet' for no spice, 'pet nit noi' for a little spice, or 'pet mak' if you want it Thai-hot. Most cooks will default to a toned-down version for foreigners unless you specify otherwise.
Follow the Crowds
The busiest street stalls are almost always the best — high turnover means fresh ingredients and a recipe that locals vouch for. An empty restaurant at dinner time is a red flag.
Ice Is Safe
Factory-made tube or cylinder ice (used in virtually all restaurants and stalls) is made from purified water and is safe to consume. You don't need to skip the iced Thai tea.
